What are our responsibilities?
The seafood industry is one of great change in recent years. We are constantly evaluating the seafood we feature and how our decisions influence the world’s oceans and the long-term sustainability of any seafood we serve in our restaurants.
It is our goal to feature species on our menu that have industry, regional and world government plans in place to manage them into the future. They are currently at sustainable levels and growing. For these species to remain at sustainable levels, and grow for the future, we will remain diligent on our policing of the world’s oceans.
Aquaculture will replace traditional harvesting of wild fish species as the world’s population continues to grow, just as the farming of grains, vegetables, meat and poultry have grown to meet the population’s demand. In years to come we will see a larger percentage of the seafood available to us as restaurateurs and consumers use aquaculture sources. It is our goal to work closely with the seafood industry through groups like the National Fisheries Institute to monitor their farming procedures and the effect their farms have on the environment.
